Brent, how long will you have to keep your pork warm? There are a lot of issues to consider and the meat can dry out easily too. Do you have an Abbey Rents in Arkansas? If so, you could rent large chafing dishes and keep the food warm over wells full of hot water fueled by cans of sterno underneath. Wow. 200 lbs. is a lot of meat!
