Gina - what a decadent frittata!

Gina - that "frittata" sounds decadent beyond belief!! I was actually teaching about a traditional frittata as a brunch dish yesterday, and the extra time for cooking potatoes obviously annoyed the "quick cooks" (don't get me started!).

The recipe you posted still won't make them happy about the "quick" part, but I think it will make up for it in the "cheesy and hearty" category for another occasion!
