a few ideas...

If you do a search for "breakfast casserole" at this site, you'll find a lot of ideas for using just a handful of ham.

Southern Americans sometimes add bits of ham to boiled veggies. Makes a big flavor difference!

Denver omelet includes ham, bell peppers, and onions (I think).

Add a handful of minced or julienned ham to soup. Ham is a must-have for split pea soup.
