Hundreds of chais
Misc. Hi Kelly,
There are HUNDREDS of recipes for chai teas... it' one of those things that each person makes differently, and maybe differently each time. I haven't had chai at Borders and don't know how it's spiced or what kind of tea they use as the base.
Spices for chai teas generally include cinnamon, cardamom, ginger, cloves, and sometimes pepper. (Think of the spices you'd put in pumpkin pie, and you're on the right track.) In Indian chai, whole spices are usually put into the teapot as the tea is being brewed, then strained outbefore serving. Milk and sugar are added to taste afterwards. There are dozens of chai mixes, teabags, concentrates, and ready-to-drink bottled chai beverages available in gourmet stores, health food stores, and even supermarkets.
To make chai from scratch, I'd start with loose tea, adding a cinnamon stick, a couple of cardamom pods, and 1 whole clove. Then decide from there what flavor needs bringing out.
