CREAM CHEESE AND ICE CREAM PUDDING PIE
1 (8 oz) package cream cheese, at room temperature
1 (4-serving-size) box instant pudding, flavor as desired
1 cup cold milk
8 oz ice cream, flavor to match pudding
1 (8- or 9-inch) cookie crust (chocolate - graham cracker, etc.)
Beat cream cheese on medium speed until smooth.
Add milk and (dry) pudding mix and beat until smooth.
Add ice cream and beat once more. Mixture will be very thick.
You may need a spatula to scoop the pie filling into the crust. Smooth the filling with spatula.
Cover and store in refrigerator until set - about 2 hours.
Cut and serve.
Be creative. Many flavors can be made from this beginning. I have made strawberry-banana, coconut, peanut butter cup, oreo, and others.
