Hi BV,
Some quick and easy salad ideas , how about just buying a bagged salad variety
and adding some of your own veggies and sending a bottle of dressing along
(Italian is usually safe), or you can do coleslaw (you can buy that prebagged as
well and buy a bottled slaw dressing). You can also do a 7 layer salad, lettuce
on the bottom, some tiny peas, shredded cheese (swiss or cheddar),some people
shred some eggs, add broccoli, some add onions or green onions and then some
Bacon bits. You seal this with regular mayo and sprinkle more bacon bit on top.
This can be made ahead so the flavors can meld. As far as a quick cookie, you
can take your favorite flavor of cakemix and add 1/3 cup oil and 2 eggs. You
can add cc. chips or whatever mixins you'd like. Just roll into balls, roll
into sugar, press down slightly and place on an ungreased cookies sheet and bake
at 375 for 9-12 minutes (when the tops crackle). You can also stick a chocolate
kiss into these as well (after baking). You can also take regular cc. cookie
dough batter and press into a greased pan and make blonde brownies, these are
quick and no fussing with individual cookies.

I hope this helps some!
Take Care!
