Some of my fave foods, Mexican, Thai and Indian can be vegan.

Curries, both Ind & Thai have vegan alternatives - for example, ate a spicy spinach & chickpea curry yesterday at an Indian rest. Thai coconut based curries are wonderful with mixed veg. instead of meat. Mexican bean, corn and rice dishes are frequently vegan. Tofu makes great fajitas (either fry it, or press it; marinate, grill to flavor and warm) serve in tortillas with pico de gallo (tomato, onion, cilantro & jalapeno relish) grilled onion and bell peppers, guacamole, chees substitute (if desired). Grilled veg. fajitas are great, too.
