STRAWBERRY-CREME FRAICHE ICE CREAM
1 pint ripe strawberries, hulled and sliced
1 cup sugar
1 cup whipping cream
1 cup creme fraiche
2 to 3 tablespoons fresh lemon juice
1 tablespoon vanilla
pinch of salt
Puree strawberries with sugar in a food processor. Transfer to a large glass measure or a bowl and whisk in cream, creme fraiche (available ready-made in most supermarket dairy sections), lemon juice, vanilla and salt. Refrigerate, covered, until thoroughly chilled.
Pour mixture into an ice cream maker and freeze according to instructions. For a firmer texture, transfer to a freezer container and freeze for at least two hours.
Serves 4-6
