Maybe paste food coloring

I haven't tried this, but I would think that maybe paste food coloring or gel type food coloring would work. Both are available at stores and mail order sources that sell candy-making supplies. Maybe the store staff could give you some direction as they are usually cooks themselves.

White chocolate is notoriously harder to work with than real chocolate. You might also consider working with candy disks (which already come in pastel colors), which are much more forgiving.
