Recipe: Crab Imperial (using corn flakes, Kellogg's, 1970's)

CRAB IMPERIAL

1 egg
1/3 cup plus 1 tablespoon mayonnaise, divided use (or salad dressing, like Miracle Whip)
1 teaspoon prepared mustard
1/2 teaspoon salt
1/8 teaspoon ground white pepper
3 cups cooked crabmeat
1/4 cup finely chopped green bell pepper
2 tablespoons finely cut pimiento
2 cups Kellogg's Corn Flakes (or 1/2 cup Kellogg's Corn Flake Crumbs)
Twisted lemon slice (for garnish)

Break egg into mixing bowl; beat slightly. Add 1/3 cup mayonnaise, mustard, salt and pepper; stir to combine. Set aside.

Flake crabmeat, removing membranes. Fold into mayonnaise mixture together with green pepper and pimiento. Portion mixture into 6 greased shells or individual casseroles.

If using corn flakes, crush into fine crumbs. Combine crumbs with the remaining 1 tablespoon mayonnaise; sprinkle over crab mixture.

Bake in moderate oven (350 degree F) about 20 minutes or until very hot and crumbs are lightly browned. Serve immediately with twisted lemon slice garnish.

Makes 6 servings
