I sympathize with you. I've stood in front of package of thawed venison and wondered what I should do with it. Did a lot of fast digging through every cookbook I owned. It was very disconcerting because I didn't have a clue as to what it was supposed to taste like. Every recipe I tried turned out well. but I would still be leary of recommending anything with my limited practice. However, you are not the first person who has inquired about cooking wild game so I did a little hunting on the web (sorry about the pun) and found a site that looked reliable. It is called The Wild Side http:/www.gatecom.com/~lwilson/index.html
Two things impressed me about the site. First, most of the recipes were sourced- the web page author told you where she got the recipes, and I recognized a number of the sources as excellent. Second, she included a hyperlink to the National Food Safety Database on wild game. This seems like wise idea. I hope this information will help you. I also hope someone with real experience responds to your request. Much luck to you.
