Recipe(tried): Dojo Carrot Tahini Dressing

CARROT TAHINI DRESSING (like Dojo's)

I spent 5 years in NYC, and savored this on many an occasion. The recipe that follows, is an hybrid of the above three and of personal recollection... combine wet ingredients, place all in blender or cuisinart, pulse... checking consistency often. Adjust flavor and texture with oil, vinegar, or water. For more coarse texture wisk in extra-finely chopped carrot to finished dressing. Very close to the original.??

2 large carrots (coarse chop)
1/2 medium onion
2 to 4 cloves garlic (to taste)
1/2 cake soft tofu
2 tbsp mirin
4 tbsp rice wine
1 1/2 tbsp shiro miso
3 tbsp cider vinegar
1/4 cup tahini
2 tbsp soy sauce
1 tbsp olive oil
