Hi Michelle, I have lived in the NWT for many years and co authored a book on country foods. The thing to remember when cooking any wild meat is that it does not have the fat content of beef or pork, but recipies can be substituted with wild meat just adding a little wine or stock. If the meat has a very wild taste, marinate it in buttermilk for a day. Also cook it slower then beef, Hope this helps.
