More on the Choc. Espresso cookie experience

I made another batch without the nuts and they were still quite dry and crumbly.
I think that I'll just try to add cocoa and espresso to a standard sugar cookie recipe, and see if I can get that deep coffee flavor that I'm looking for. I like the fact that these cookies are not too sweet and emphasize the coffee rather than chocolate.
