Oven Tomato Sauce or Puree

Hi,
I have started to cook batches of my tomato puree in pans in the oven and the crockpot rather than on top of the stove for canning. I read somewhere that this could be done but cannot find the article so I am guessing at the temps and lenght of time and the "how to's". It is going rather slowly, I started yesterday and had to put the pots in frig for the night, and I'm restarting them today. Seems like it shouldn't take this long. Any advice would be greatly appreciated. Thanks, Karen
