Hi, Nicki. If you fill the pot sticker skins with mashed potatoes and cheese, they become pierogi (Polish). If you fill them with pork, sauteed onion, salt, pepper and dill and then serve them in broth with sour cream and more dill, they become pelemeni (Russian). Pot sticker skins and won ton skins are so versatile, that they can become practically anything (tortellini too). Experiment and have lots of fun!
