Recipe: Beef Porcupines (using Rice-A-Roni)

BEEF PORCUPINES

1 (8 oz.) pkg. Beef Flavor Rice-A-Roni
1 lb. ground beef
1 egg, beaten
2 1/2 cups water

Combine rice and vermicelli with ground beef and egg. Shape into patties or small meatballs (approximately 20). Brown on all sides in skillet.

Combine contents of Rice-A-Roni flavor packet with 2 1/2 cups water. Pour over meatballs. Cover and simmer 30 minutes.

Thicken gravy if desired. (Remove meatballs from pan and keep warm. Mix a small amount of water and flour or cornstarch together; add to liquid in pan, while stirring. Simmer and stir over low heat until desired thickness).

Makes approximately 20 meatballs
