Recipe: Italian Fried Tomatoes (using bread crumbs and mozzarella, 1980's)

ITALIAN FRIED TOMATOES

2 beaten eggs
1 tablespoon milk
4 firm medium tomatoes
1 cup fine dry seasoned bread crumbs
2 to 3 tablespoons cooking oil
1/2 cup shredded mozzarella or cheddar cheese (2 ounces)

In a shallow bowl combine eggs and milk; set aside.

Cut tomatoes into 3/4-inch-thick slices. Dip tomato slices in bread crumbs, then in egg mixture. Dip again in crumbs.

In a skillet cook tomatoes in hot oil over low heat, turning to brown on both sides. Sprinkle cheese over tomatoes. Cover and cook over low heat till cheese is almost melted.

Makes 4 to 6 servings
