Preserving Red BellPeppers

Linda - just came across your request. I've only just found this site and wonderful it is. Re preserving red peppers - I keep them by freezing them as they are after roasting skin and all. I've frozen them several times now and they work just fine. I stick them in a plastic bag and that is all. They separate quite well, are easy to peel and taste terrific. Wonderful to have in the cold winter months when fresh local produce is only a distant memory. We have long winters where I live! Anyway I hope this helps. I do know someone who keeps her peppers in oil i think. I've never tried it tho I've watched her and she does great quantities.
