re: canning mustards

Unless the recipe is safety tested from a reliable source such as USDA or Ball Blue Book they should not be canned.
No recipes with flour, eggs, oil, etc. are safe to can. That can lead to botulism.

Check the current Ball Blue book for some good recipes. It will cost about $6 for a copy.
