re: Canning Potatoes

I pressurre can potatoes. I can small ones whole and large ones quartered. Check out new Ball Blue Book page 66.

Now, concerning the pickle you are making, I also do pressure can some of my pickles, not just water bath them, and I use the pint quantity and requirements for pickle canning, not the quart capacity and requirements.

My best results are not to use the mealy type of potatoes which normally are grand for baking. I use a firmer one like the golden, the red, hard whites, etc. These also work well in potatoes salads, potato pickles.
