re: Clear jell

Clear Jell is not the same as pectin. Clear Jell is a special modified corn starch. It will not break down during the canning process and become watery like regular corn starch. Normally it is ordered online. I am sorry, I don't know where you can order or purchase it in Canada. I have a good source here in the US. It can also be used in gravies and sauces that are to be frozen and won't break down. You can make a jam from it, too. The texture is not the same as regular pectin, but some people really like it for jam.
Clear jell is the same thing as modified food starch in commercial products.
