re: Clear Jel - not the same as Certo....

Funny I should run across your question just now... I spent most of today searching for ClearJel, as I wanted to can some peach pie filling and it's the only thickener recommended by the USDA Canning Guide as being able to survive the heat of the canning process. I even called my county extension agent home economist for a local source, and she couldn't even tell me a local source -- and we're in the middle of farm country!

ClearJel is apparently a type of corn starch that has been modified, and not interchangeable with thickeners designed for jams and jellies, like Certo and SureJel.

I finally found three mail order sources online and one eBay seller, all of which sold one pound packages of ClearJel for around $3. All of them were charging about $6 for shipping, so I finally wound up ordering two pounds (since the shipping cost was the same as for one) from this site, only because they also had some silicone mitts I've been wanting:
