re: Crock Pot Orange Marmalade question

Misc.
Hi Darlene,

Thank you for letting us know about your results, I'm sorry that the recipe didn't work out for you. I haven't tried the recipe myself so I went back to the book to double-check the instructions and ingredients and the recipe posted is word-for-word from the book. I'm wondering if the problem is with differences in crock pot temperature between models and older and new crock pots. Or maybe differences in oranges - thicker-skinned oranges would have more bitter white pith. If you want to keep experimenting, maybe cut off the orange peel/zest to use in the recipe and discard some of the white pith before processing. Since the recipe says to check every 2 hours for consistency during the first (up to 6 hour) cooking period on low, maybe you can finish the first cooking in 4 hours then turn the crockpot to high and cook uncovered for 1 to 2 hours or until the right consistency. I wouldn't blame you if you didn't want to try again! If you do, or if anyone else does, please let us know how it turns out.

Happy Holidays!

Betsy
