CHAR-GRILLED PINEAPPLE WITH SWEET RUM GLAZE
1 unpeeled medium pineapple, quartered
2 tablespoons dark rum
1 tablespoon fresh lime juice
2 tablespoons honey
Cut away core from pineapple quarters.
For glaze, combine rum, lime juice and honey and stir to dissolve.
Grill over medium-low coals, brushing with glaze, until hot and lightly charred, about 5-10 minutes per side.
Serve hot with any remaining glaze drizzled over.
Makes 4 servings
