I no longer eat sugar and have learned that many "sugar-free" muffins and cookies are made with Fructose, which causes the blood sugar level to rise gradually and therefore helpful for people avoiding sugar. It is sold in most supermarkets and you generally use 1/3 less of the Fructose than the called for amount of sugar in a given recipe. So for instance, instead of 3/4 cup sugar, you use 1/2 cup Fructose. Also, mashed dates make an excellent sweetner. You'll have to experiment to see how much suits your taste. Do NOT use NutraSweet in baking. I have learned that it is not exactly healthy when heated through the baking process. Turns into a sort of formaldehyde!! Won't kill us but not the best stuff to eat!!!
