http://nesco.com...I e-mailed the 'contract mfg' and asked for directions for you, Becky...but they make the inserts, etc...hope they will re-direct the inquiry and you can also inquire if you like, by accessing website...good luck.
My old Westinghouse roaster oven, had a larger capacity than the 18qt and the top weight on the turkey roasting guide was 10-12 pounds. 325 degrees
3 and 1/2 to 4 hours. I had used the new turkey cooking bags in mine and it did not stick/burn to the sides of the roaster. Oh, hey...I got out my pkg of Reynolds Oven Bags and on the side is this website-http://www.rmc.com/wrap maybe they can answer your question better!
