Hi Walter,

I think fishing line will melt in the oven. You can roast your turkey without trussing it. Tuck the wing ends under the bird and just leave the legs untied. If you're cooking a stuffed bird and there isn't enough 'flap' to pin together over the cavity, you can tuck a piece of aluminum foil over the stuffing and into the cavity to cover the opening and help keep the stuffing moist. Or, bake the stuffing in a separate casserole and stuff the turkey with lemon halves, a peeled and halved onion, a few garlic cloves (if desired) and fresh herbs.
