Hello all!
Well, it is the end of a long weekend here in Canada, and I have spent a good deal of it cooking my little heart out.
Saturday, my DS's had friends over, and they wanted to learn how to roll sushi. I got all that ready for them, and made 2 blueberry crumble pizzas for dessert. Sunday, we had a delicious BBQ of teriyaki beef brochettes, shrimp brochettes with garlic lemon butter, and assorted vegetable brochettes. This morning, I peeled and sliced and froze the red pepper I roasted alongside the meal from yesterday, to use in quesadillas and sauces later. I sliced about 8 pounds of onions and put them in the slow cooker, to cook over the next day or so, to make myself a mess of caramelised onions, which will also be divvied up and frozen for later use. Then, I made lunch (cream of celery soup),loaded this curry into the slow cooker, and sat myself down on the sofa to watch Brokeback Mountain with my DH. It was a bittersweet love story; my husband and I both got a lot out of it.
This recipe is actually an adaptation of a pressure cooker one I found. I was intrigued by the ingredients, somehow they seem improbable, but we tried it and we liked it. And they are igredients we always seem to have on hand, so we will be having it quite regularly, I think.
CHICKEN, SPINACH, AND POTATO CURRY
4 to 6 potatoes, peeled and cut into chunks
1/4 cup chicken broth or water
2 1/2 pounds of bone-in chicken thighs, skinned and trimmed
1 (10-oz) package of frozen chopped spinach
1 1/2 cups pasta sauce (I used Prego)
1 1/2 TBSP curry powder
1 TBSP turmeric
1 TBSP ground cumin
Put the potatoes in the bottom of the slow cooker. Add broth or water. Arrange chicken on top of the potatoes. Top the potato and chicken layers with the rest of the ingredients mixed together.
Cover and cook on low for 6-8 hours. I usually start on high for an hour or so, just to bring the cooker up to speed. Then I turn it down to low for another 5 hours or so.
