Recipe: The OLD (or original) Bill Knapp's Bean Soup (ingredients)
SoupsThe ORIGINAL Bill Knapp's BEAN SOUP recipe
During the last 5-10 years PRIOR to their closing, they DID turn to pre-made foods (to my knowledge). However, for most of the time they were in business and MOST DEFINITELY while Bill, himself, was alive, their bean soup was HOMEMADE, not canned.
It contained:
Great Northern beans
celery
chicken broth (probably WITHOUT fat removed)
carrots
potatoes
SMOKED ham
onion
garlic
butter
sugar
heavy cream
I also believe it contained:
onion powder
celery salt
thyme
(possibly Italian Seasoning, not sure??)
Also, there MIGHT have been green pepper as well??
They kept the soup in a steam bath, where it cooked and thickened all day long. One of the jokes was, if you liked it thin, you enjoyed it early in the day. By evening, it was thick and stuck like Napalm (if spilled).
