ISO: dorm cooking for one in a crock pot or microwave

My son is in the Air Force. He lives in a dorm room with only a crock pot (1.5 quart) and a small microwave oven to cook with. He needs recipes for one or two that he can utilize under these conditions. No browning, no frying, no baking... not even a toaster! Please help me to help him with this cooking challenge! He wants to eat healthy foods, lots of veggies excluding peas only. I would be so grateful for your help! Michelle
