Recipe: Dorm Room Cooking for One (11)

here's some ideas and recipes.. wondering if he's able to get a hot plate that would allow for using a skillet.. may be worth looking into..

Garbanzo Lemon Spread
Can be used in pita or on bagels or crackers.
Yield: 1 1/2 cups spread

Combine:
1 can drained garbanzo beans (reserve liquid)
juice from half a lemon
1 green onion, chopped
2 Tbsp. chopped parsley
2 cloves garlic, chopped

Process in food processor until smooth (add some of reserved liquid if too thick).

Chicken Apple Spread
Spread on bagels or eat plain.

Combine:
1 cup chopped cooked seasoned chicken
2 Tbsp. nonfat yogurt
1 tsp. minced parsley
2 Tbsp. apple juice
chopped walnuts, apples, and/or raisins (optional)

Chicken Corn Salad

Yield: 2 servings

2 cups chopped cooked chicken
2 cups cooked corn
1/2 cup fine chopped red pepper
1/4 cup chopped pimento
1 tablespoon relish
2 tablespoons mayonnaise

Mix all together.

Chicken Rice Salad

Yield: 2 servings

1 cup cooked chicken, diced and chilled
1 cup cooked rice, chilled
3 tablespoons chopped scallions
1 carrot, grated
6 green olives, chopped
2 tablespoons Dijon mustard
1 tablespoon parsley
1/4 teaspoon dill

Mix together all and chill.

Christy's Couscous

1/2 cup couscous
3/4 cup chicken broth
dry parsley
lemon pepper
garlic herb
grated parmesan cheese

Place couscous in microwave container with vented lid. Add liquids (can use water). Cook on high for 1 minutes 10 seconds. Let sit, not vented, for up to 5 minutes until liquid is absorbed. Season to taste and sprinkle with Parmesan and butter if desired.

Cup-A-Lasagna
Recipe By : The Vegetarian Lunchbasket

flour tortillas
tomato sauce
grated mozzarella or cheddar
grated parmesan cheese
ricotta cheese
fresh spinach (optional)

Break flour tortillas into pieces the size of thermos bottom. Heat the sauce very hot. Layer tortillas, cheeses and sauce (and optional spinach, which will wilt nicely). Cap quickly and by lunchtime, you'll have warm, melty lasagna.

Tabouli

Put 1/2 cup bulgur in bowl
Pour 1 cup boiling water over it. Let stand 1 hour.
Drain water. Refrigerate overnight.
In morning, add:
1/2 cup chopped parsley
pinch of dried mint
2 Tbsp. lemon juice
1/4 cup chopped green onion
1/2 cup cooked garbanzo beans

Tuna Fruit in Pita Pocket

1 can tuna, drained
1/2 cup fine chopped apples
1/4 cup fine chopped grapes
1/4 cup fine chopped walnut or pecans
1 pita bread

Combine all with just enough mayo to hold it together. Spoon into pita pocket.

Baked Potatoes With A World of Toppings

Potatoes msy be 'baked' in the microwave and toppings varied to taste.
Servings : 4

4 medium baking potatoes (1 1/2 pounds)
Toppings (below)

Heat oven to 400F. Pierce potatoes with fork to allow steam to escape. Bake 45 to 60 minutes or until tender. Cut an x in top of each potato. gently squeeze potato from bottom to force potato open. Serve with desired toppings.

Italian

1 1/2 cups spaghetti sauce heated
1/4 cup mozzarella cheese ( 1 ounce)
1 tablespoon grated Parmesan Cheese

Spoon spaghetti sauce, onto potatoes. Sprinkle with cheeses.

Mexican

1/2 cup sour cream
1/2 cup salsa
4 green onions sliced

Mix sour cream and salsa; spoon onto potatoes. Sprinkle with onions.

Bavarian

3/4 cup sour cream
1 teaspoon mustard
1/4 teaspoon dried dill weed
3/4 cup chopped fully cooked smoked ham
4 green onions sliced

Mix sour cream, mustard and dill weed; spoon onto potatoes. Sprinkle with ham and onion.

Corn and Black Bean Salad with Lime Dressing*
Recipe By : Ketchum Recipes

DRESSING:
3/4 teaspoon ground cumin
1/4 cup fresh squeezed lime juice
2 tablespoons oil
1 tablespoon minced fresh jalapeno (optional)
1/2 teaspoon salt (optional)

SALAD:
1 (11 ounce) can corn kernels, drained
1 (15 ounce) can black beans, rinse and drain
1/2 cup red and green bell pepper, chopped
1/2 cup diced sweet onion
1/4 cup chopped fresh cilantro or parsley

Place the cumin in a small skillet and set over low heat just until the skillet gets warm and the cumin is heated, about 1 minute. Off the heat, add the lime juice and vegetable oil, plus jalapeno and salt, if desired; whisk to blend. In a large bowl combine the corn, black beans, red and green peppers, onion, cilantro or parsley. Add the lime dressing and toss to coat. Spoon the salad onto a deep platter or shallow bowl and garnish with sprigs of fresh parsley.

Bite Size Pepperoni Pizzas

Yield: 32 servings

4 english muffins
8 ounces pizza sauce
16 slices pepperoni, cut in half
1 cup mozzarella, shredded
other toppings as desired

Split the muffins in half and toast them in the toaster. Spread the pizza sauce on both halves of the muffins. Top with the onions. Cut each muffin half into four pieces. Place the eight muffin pieces in a circle around the edge of a paper plate (four plates will be used). Lay one-quarter section of the green pepper on top of each muffin piece. Place one-half slice of the pepperoni on top of each muffin piece. Top evenly with the mozzarella cheese. Place each plate, uncovered, in the microwave, and cook on HIGH for 1 minute; rotate each plate one-half turn after 30 seconds.
