Recipe(tried): bar-b-qued Pork Rinds

Misc.
Ok, I know it doesn't sound good but if your are into bar-b-que you MUST try this. Also if you like pork rhinds. Have the butcher save you some pig snoots. He should know what they are. Lay it down flat and fillet some of the meat off of it. All you want is the rhind and SOME of the meat. Next, score it both ways about 1/4 in. apart. This will keep it from curling up like bacon during cooking. Cook it on the grill, turning it often, till it is crisp. During cooking, NEVER get it wet from water or sauce. It will get soggy.
Cook it untill you can snap off a piece like a pork rhind. Lay them on a plate to cool and cover them with a towel. When you are ready to eat them, just dip them in sauce and enjoy. They are crispy and crunchy and taste just like a giant pork rhind with bar-b-que sauce. Be the first on your block. It dont get no betta dan dat.
