IF you are referring to the Fajita steak, all you really need is either Jerk seasoning, or mesquite powder and you'll basically achieve the same results.
If you want to re-create the Bourbon St Steak, you should be using cajun seasonings as well as other favored polynesian spice combinations including:
Cinnamon, brown sugar, ground cloves.
