Lemon Meringue Pie

1 pie crust -- baked and cooled
1 1/4 cups sugar
2/3 cup cake flour
pinch salt
1 1/2 cups water
5 egg yolks
1/2 cup lemon juice
2 tablespoons grated lemon rind
1 tablespoon butter
5 egg whites
5 tablespoons sugar
1/2 teaspoon vanilla

To make filling, combine sugar, flour, salt, and water, and cook 10 to 20 minutes, until mixture becomes bery thick and almost translucent. Remove from heat, and beat in egg yolks. Cook 6-7 minutes more. Remove from heat and stir in lemon juice and rind. Whisk in butter.
Preheat oven to 375 .
Pour hot filling into pie shell.
Beat the egg whites until fluffy, adding the sugar one tablespoon at a time. Add the vanilla. Distribute the meringue evenly over the filling, being careful to seal the edges. Bake until the meringue is tinged with brown.
