Recipe: Triple Cabbage Slaw (no fat, using orange marmalade and ginger)

Salads - Assorted
TRIPLE CABBAGE SLAW

2 cups thinly sliced Chinese or Napa cabbage
1 1/2 cups shredded green cabbage
1/2 cup shredded red cabbage
1 tablespoon chopped fresh chives
3 tablespoons orange marmalade
2 tablespoons rice vinegar
1 teaspoon grated gingerroot

Mix cabbages and chives in large glass or plastic bowl.

Mix marmalade, vinegar and gingerroot in small bowl until blended. Add to cabbage mixture; toss lightly to mix.

Makes 4 servings

Nutrition facts per serving: 50 calories, 0 g fat, 0 mg cholesterol, 35 mg sodium, 13 g carbohydrates and 1 g protein.

Diabetic exchanges: 1/2 fruit and 1 vegetable.
