Recipe: A Rainbow of Cheese Truffles

A RAINBOW OF CHEESE TRUFFLES

1/2 pound (2 sticks) unsalted butter, at room temperature
2 cups (6 ounces) shredded cheese, such as sharp cheddar, aged Gouda or fontina
Salt and freshly ground black pepper (to taste)
Different coatings (see below)

Cut butter into pieces and cream in bowl of electric mixer. Add cheese and blend. Add salt and freshly ground black pepper to taste. Chill until firm but still pliable.

Shape into 34 balls, each about three-fourths inch in diameter. Roll thoroughly in any of the coatings listed in the following note. Use four or five types to create a colorful effect.

FOR COATINGS:
Fine fresh bread crumbs made from black bread
Sweet Hungarian paprika or mild chili powder
Poppy seeds
Finely chopped fresh parsley
Cumin seeds, toasted and pulverized
Toasted sesame seeds
Dried mint leaves

Makes about 34 truffles
