Recipe(tried): Alonti's Wedding Soup (copycat recipe)
SoupsI took a guess at it and got pretty darn close!
All the measurements are More or Less, wing it as per your preferences
ALONTI'S WEDDING SOUP
(copycat recipe)
1 large, boneless chicken breast
1 stick (1/2 cup) butter
Cut the chicken into small pieces, saute in butter until cooked.
Add:
3 cups finely chopped celery
1 medium white onion, finely chopped
1 bunch green onions, finely chopped, including greens
1 small bunch Italian parsley, minced
bay leaves
Saute until tender.
Add:
2 cans low fat, low sodium, chicken broth
3 cups milk or half & half
2 cups water
1 cup orzo pasta
2 tablespoons oregano
1 teaspoon ground white pepper (more or less, to taste)
Salt to taste
Simmer until the pasta is tender.
