Recipe: Apple Walnut Coffee Cake (Jiffy Mix recipe, microwave)

APPLE WALNUT COFFEE CAKE

1/3 cup packed brown sugar
1/2 cup chopped walnuts, divided use
2 cups Jiffy Baking Mix (like Bisquick)
1 cup chunky applesauce
1/3 cup milk
1/2 teaspoon ground cinnamon
FOR THE GLAZE:
1/2 cup confectioner's sugar
2 teaspoons milk or water
1/2 teaspoon vanilla

Mix brown sugar and 1/4 cup walnuts; set aside.

Mix remaining ingredients, beat 30 seconds. Spread in round microwave 8x2 inch dish, greased. Sprinkle with brown sugar mixture.

Microwave on power level 10 (high) rotating dish every 3 minutes until top springs back when touched lightly and cake begins to pull away from side of dish, about 6 to 9 minutes. Cool 10 minutes on heatproof surface (not wire rack).

Drizzle with glaze made by mixing confectioner's sugar, milk or water, and vanilla, stirring until smooth.

Makes 10 pieces
