Recipe: Jack's Lounge's Kale

JACK'S LOUNGE'S KALE

2 slices bacon, diced
1/2 onion, peeled and chopped coarsely
3/4 cup rice vinegar
2/3 cup chicken broth
1/2 cup brown sugar
2 pounds kale, washed and stems removed
Salt and pepper to taste

In a large pot, cook diced bacon over medium heat until limp and fat is rendered.

Add the chopped onion, and cook, stirring occasionally, until bacon is crisp and onion is translucent.

Add the rice vinegar and chicken broth, and stir, scraping up browned bits on bottom of pot. Add the brown sugar, and mix well into the liquid.

Adding the washed kale, with some water still clinging to leaves. Cover loosely, and simmer an hour or so, until tender. Add more water if the pot seems to be cooking dry; do not let the pot dry out and the kale burn. Taste, and adjust seasoning with salt and pepper.

Serves 4
