APPLE AND BACON MUFFINS
2 cups all purpose flour
4 teaspoons baking powder
1 Tablespoon granulated sugar
1 teaspoon salt
1 egg, beaten
1 cup milk
2 Tablespoons shortening, melted
10 Tablespoons sweetened apple sauce
3 strips uncooked bacon, finely chopped
Sift together dry ingredients, add egg, milk and melted shortening; mix all together quickly. Place a mixing spoonful of batter in cup of muffin pan. Place 1 tablespoon applesauce on top of mixture in muffin pan and cover with another mixing spoonful of batter. Repeat until you prepare 10 muffin cups. Evenly sprinkle top of each muffin with chopped bacon.
Bake in 400 degree F oven about 25 minutes.
