Recipe(tried): Banana Bread (Martha Stewart recipe using butter and sour cream)
Breads - Muffins, Quick BreadsI know everyone has their own recipe for Banana Bread, but this is so good... I just had to share it. The sour cream is what sets it apart from other recipes. It is very moist and has a light texture. It is from Martha Stewart. This is my go to.
BANANA BREAD
Makes 1 large loaf
1 stick (1/2 cup) butter, room temp
1 cup sugar
2 eggs, room temp
1 tsp. vanilla
1 1/2 cups flour
1 tsp. baking soda
1 tsp. salt (I know this seems like a lot. I used 1/2 tsp).
1 cup mashed very ripe bananas
1/2 cup sour cream (I used light)
1/2 cup chopped nuts (walnuts or pecans)
Preheat oven to 350 degrees F. Butter a 9x5x3-inch loaf pan.
With electric mixer, cream butter and sugar until light and fluffy. Add the eggs and vanilla, beating well.
Sift dry ingredients and combine with butter mixture. Blend well. Add bananas and sour cream; mix well. Stir in nuts and pour into prepared pan.
Bake about 50-60 minutes, or until toothpick comes out clean (careful not to overbake; start checking early). Turn onto a rack to cool.
