AUNT BEA'S RHUBARB CAKE
1 1/2 cups brown sugar
1/2 cup margarine, softened
1 egg
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1 cup buttermilk
1 1/2 cups finely cut raw rhubarb
FOR THE TOPPING:
1/4 cup white granulated sugar
1 tsp. ground cinnamon
Cream together brown sugar and margarine. Beat in egg and vanilla.
Mix together flour and baking soda and add alternately with buttermilk to creamed mixture. Stir in rhubarb. Put in greased (13x9-inch) pan.
Mix white sugar and cinnamon together and sprinkle on top of cake.
Bake at 375 degrees F for 45-50 minutes.
