Recipe: Baconwiches with Hot Apple Syrup (using apple jelly)

Breakfast and Brunch
BACONWICHES WITH HOT APPLE SYRUP

8 slices bacon
2 eggs, slightly beaten
3/4 cup milk
1/8 tsp salt
8 slices bread
hot apple syrup
FOR THE HOT APPLE SYRUP:
1/2 cup apple jelly
2 tbsp butter
1/8 tsp cinnamon

In skillet cook bacon till crisp. Drain bacon; reserve drippings.

Combine eggs, milk, and salt. Dip bread in egg mixture.

Fry in drippings till brown.

TO SERVE:
Crumble bacon over 4 toast slices; top with remaining toast. Pass Hot Apple Syrup.

TO MAKE THE HOT APPLE SYRUP:
In small skillet melt apple jelly and butter with cinnamon; stir till smooth.
