Recipe: Banana Bread

I found this on the net several weeks ago, and it is good. It is also less fattening
than some. Hope you enjoy it! Beth
BANANA BREAD
3 large ripened bananas
1 egg, or equivalent egg substitute (I used 2 egg whites instead)
2 Tbs. vegetable oil
1/4 c. skim milk
1/4 to 1/2 c. sugar (according to desired taste)
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1 1/2 c. flour (white, whole wheat, or combination)
can add dashes of nutmeg, allspice, and cinnamon if desired
Preheat oven to 350 degrees.
Mash bananas with a fork. Add egg, oil, milk and sugar. Combine dry ingredients and gently blend into banana mixture until moistened.(about 20 seconds, don't overstir) Pour mixture into a sprayed or wax-paper lined loaf pan. Bake for 45 minutes or until toothpick passes the insertion test.
