Recipe: Old South Banana Nut Bread

Kim, Here is an excellent recipe for banana bread, Enjoy!
Old South Banana Nut Bread
1/2 cup butter
1 cup white sugar
1/2 cup brown sugar
2 eggs
1 1/2 cups flour
1/2 tsp. salt
1 tsp baking soda mixed into
1/2 cup buttermilk
1 cup mashed bananas
1/2 cup chopped nuts
Cream butter and sugars together. Add eggs, flour and salt: mix. Add buttermilk mixture and beat well. Mix in bananas and nuts. Pour into a greased and floured loaf pan. I use several mini loaf pans. The larger the pan, the longer it takes to cook and the darker the bread becomes on top. Bake 350 for 1 hour or until done. Cool 10 minutes in pan and turn out on rack. Enjoy!
* Can make buttermilk substitute by making soured milk: Take 1 cup of milk and add 1 Tablespoon of lemon juice or vinegar.
