Recipe: Banana Bread (using butter and lemon juice, C&H sugar recipe)

BANANA BREAD

1 cup sugar
1/2 cup (1 stick) butter or margarine, sofened
2 eggs, unbeaten
1 1/2 cups mashed bananas (3 or4)
1 tablespoon lemon juice
2 cups sifted all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped nuts

Cream sugar with butter. Add eggs, one at a time, beating well after each addition. Stir in bananas and lemon juice.

Sift flour with baking powder and salt; add to the banana mixture and mix quickly. Stir in nuts. Place in a greased 9x5x3-inch loaf pan.

Bake at 350 degrees F about 1 hour, or until tested. Cool on rack.

Makes 1 loaf
