HOT MILK JELLY CAKE OR BANANA CAKE
1/2 cup milk
1/4 cup butter
1 cup flour
1 tsp baking powder
1/2 tsp salt
1 cup sugar
2 eggs
1 tsp vanilla
jam, jelly, or preserves or bananas (for filling)
confectioner's sugar icing
Preheat oven to 325 degrees F. Grease a round or square layer cake pan.
Scald milk together with butter. Let cool until slightly warm.
Sift together flour, baking powder, and salt; set aside.
Beat sugar with eggs until light and thick. Stir in the flour mixture. Stir only until blended. Add the slightly warm milk and vanilla. Stir quickly and pour into prepared cake pan.
Bake at 325 degrees F until done. Cool slightly. Remove from pan and cool on a rack.
Cut cooled cake in half, making 2 layers. Spread one half with preserves and place second half on top. For Banana Cake, fill with sliced, sweetened bananas mixed with 1 tbsp lemon juice.
Frost top with a thin confectioner's icing (confectioner's sugar mixed with a small amount of water or milk for desired consistency).
This is a good cake to serve as Boston Cream Pie or shortcake.
