Recipe: Orange Raisin Gems (muffins) (Arm & Hammer Baking Soda, 1949)

2 cups sifted all- purpose flour
3/4 teaspoon Arm & Hammer Brand or Cow Brand Baking Soda
1/2 teaspoon salt
1/3 cup sugar
1/2 cup raisins
1 egg, well beaten
1/3 cup orange juice
1/2 teaspoon grated orange rind
1 1/3 tablespoons vinegar and sweet milk to make 2/3 cup
1/3 cup shortening, melted
Sift flour, soda, salt, and sugar together in mixing bowl. Add raisins.
Combine egg, orange juice and rind, vinegar and milk, and melted shortening. Add to dry ingredients and stir only until dry ingredients are dampened. Fill greased muffin pans 2/3 full.
Bake at 425 degrees F. (hot oven) for 20 minutes. Remove from oven and let stand for several minutes before removing from pans.
Variation:
1/2 cup nuts may be added with raisins, if desired.
Makes 1 dozen 2-inch gems
