Recipe: Borscht

Borscht is a russian soup. Here is a recipe from The Joy of Cooking.

Chop until very fine:!/2 cup peeled carrots, 1 cup peeled onions, 2 cups peeled beets. Barely cover these ingredients with boiling water, simmer gently, covered, about 20 minutes. Add the following and simmer 15 minutes more: 1 Tbsp. butter, 2 cups beef stock, 1 cup very finely shredded cabbage , 1 Tbsp. vinegar.
Place the soup in bowls, Add to each serving 1 Tbsp.. sour cream, season to taste. Serve hot or cold with pumpernickel bread.
